Last mezzes home made cream cheese, baked eggplant and zucchini with garlic



 








Just simple and garlicky ;) food is the best!

Baked Eggplant

1 eggplant
2 garlic cloves crushed
Olive oil
Salt
Lemon Juice
Pepper

Wash and dry the eggplant. In the oven, or in the barbecue or on the stove, bake the eggplant. Peel it, and mash it with a fork. Season it with garlic, salt, pepper, olive oil and lemon juice. Serve it warm. ENJOY!!

Zucchini and garlic

4 zucchinis
3 cloves of garlic crushed
1/2 teaspoon of turmeric
1/2 teaspoon of fresh grinded cumin
olive oil
salt

Wash and dice the zucchinis. In a pot, heat olive oil and place the zucchinis for cooking them. Add salt, cumin, and turmeric. Once they are cooked, mash them with a fork, and add the garlic. Correct it for salt. Serve it warm. ENJOY!!

Home made cream cheese

2 liters of milk
White vinegar
salt
2 garlic cloves
Pimentones del piquillo
Butter
Olive oil

Boil the milk, and add the vinegar slowly. Heat it until it curdles it. Take the curdle out of the whey water. You can use this water for making bread. 
Divide the curdle in 2 portions. Place 1/2 of the curdle in a mini processor and beat it until it is creamy. Add 2 tablespoons of butter, 1 tablespoon of olive oil, and salt. Beat it again. Take it out, and place it in a bowl. Add chopped garlic and chopped pimentones del piquillo. Make a cylinder, and wrap it. Place it in the fridge for 1 hour. Do the same process with the other half with just garlic or whatever you want to use it. ENJOY!!

  1. I love food with lots of garlic too :-) Homemade cream cheese is something I have yet to try. Definitely on my list to try soon!
