Pionono salado y Tiramisu

 



Feliz 2021 !!! .... todos mis mejores deseos para ti y tu familia ....

No quería tener una gran comida en Navidad ya hemos comido todas esas galletas. Hice piononos salados con ensalada y tiramisú ... Las fotos no son buenas ya que las tome de noche ....

Pionono (cada uno)

3 huevos separados
20 gramos de azucar
90 gramos de harina
20 gramos de maicena
1/2 cucharadita de levadura en polvo

Mezclar los ingredientes secos y tamizarlos.

Batir las claras hasta que estén muy espumosos. Agrega lentamente el azúcar y bátelo hasta que esté muy firme. No se preocupe, el sabor no es dulce. Es para hacerlo firme. Agrega las yemas de huevo incorporándolas lentamente. Agrega los ingredientes secos y mezcla con cuidado para evitar grumos.

Distribuirlos en un papel para horno y hornear a 350F durante 12-14 minutos, hasta que estén dorados. Sácalo del horno y enróllalo para darle flexibilidad. Deja enfriar

Relleno de atún
1 lata de atún
mayonesa
eneldo
limón
aceitunas
huevos hervidos

Mezclar el atún con mayonesa, eneldo y unas gotas de limón. Dejar de lado.
Pica las aceitunas y reserva.
Triture los huevos duros y mézclelos con mayonesa.

Sobre el pionono, esparce el atún. Haga solo una columna de huevos y agregue encima algunas aceitunas. Enróllelo y colóquelo en el frigorífico durante 2 horas. sírvelo con ensalada. ¡DISFRUTAR!

Relleno de aguacate y camarones
2 aguacates
mayonesa
ajo
limón
camarones cocidos
cebollín

Mezclar los aguacates con mayonesa, unas gotas de limón y ajo. Dejar de lado.
Mezclar los camarones con mayonesa, cebollino y unas gotas de limón. Dejar de lado.

Sobre el pionono, esparce la mezcla de aguacate. Haz solo una columna de los camarones. Enróllelo y colóquelo en el frigorífico durante 2 horas. Sírvelo con ensalada. ¡DISFRUTAR!






Tiramisú sin yema de huevo

Soletillas. Hago las soletillas en casa, pero vi en youtube (se me olvidó dónde ....) que no hay necesidad de hacerlo en forma de soletilla. Solo hago un gran rectángulo y lo corto según se necesite la forma del molde.

Soletillas

3 huevos separados
110 gramos de azúcar
100 gramos de harina
1/2 cucharadita de levadura en polvo

Batir la clara de huevo hasta que esté espumosa. Agrega el azúcar y bátelo hasta que esté muy duro. Incorpora lentamente la yema de huevo. Agrega los ingredientes secos previamente tamizados. Colóquelo en un papel pergamino. Hornee a 350F hasta que esté horneado. deja enfriar.

Relleno

225 gramos de queso mascarpone
200 gramos de nata para montar
4 hojas de gelatina
2 espresso dobles recién hechos para el relleno
azúcar a tu gusto

Batir la nata para montar hasta que esté firme. Agregue azúcar glass a su gusto y reserve.

Coloca las hojas de gelatina en agua fría hasta que estén hidratadas. Colócalo con el espresso y caliéntalo a ambos hasta que se disuelvan. Batir el mascarpone con la mezcla de café y mezclarlo con la nata para montar, reservar.

Prepara 2 espresso de doble trago recién hechos para las soletillas. agregue azúcar a su gusto.

Corta las soletillas a tu molde. Encima, agregue un poco de espresso para humedecerlo. Ad el relleno de tiramisú. Coloca otra capa de soletilla y repite nuevamente. Cúbrelo con una soletilla y encima un poco de café. Colóquelo en la nevera durante 2 horas antes de servir. ¡DISFRUTAR!





Savory pionono and Tiramisu

I didn't want to have a big meal for Christmas since we have been eaten all those cookies; thus. I made savory piononos and tiramisu...Pictures are not good since they were taking at night....

Pionono (each)

3 eggs separated
20 grams of sugar
90 grams of flour
20 grams of cornstarch
1/2 teaspoon baking powder

Mix the dry ingredients and sift them.

Beat the white eggs until it is very foamy. Slowly add the sugar, and beat it until it is very firm. Don't worry, the taste is not sweet. It is to make it firm. Add the egg yolks incorporating them slowly. Add the dry ingredients, and mix it carefully to avoid lumps.

Distribute them on a parchment paper, and bake it at 350F for 12-14 minutes, until is golden brown. Take it out of the oven, and roll it to give it flexibility. Let it cool

Tuna filling
1 can of tuna
mayonnaise
dill 
lemon
olives
boiled eggs

Mix the tuna with mayonnaise, dill, and few drops of lemon. Set aside.
Chop olives, and set aside.
Mash boiled eggs, and mix it with mayonnaise.

On top of the pionono, spread the tuna. Make only one column of the eggs, and add on top some olives. Roll it and place it in the fridge for 2 hours. serve it with salad. ENJOY!

Avocado and shrimp filling
2 avocadoes
mayonnaise
garlic
lemon
cooked shrimp
chives

Mix the avocadoes with mayonnaise,  few drops of lemon, and garlic. Set aside.
Mix the shrimp with mayonnaise, chives and few drops of lemon. Set aside. 

On top of the pionono, spread the avocado mix. Make only one column of the shrimps. Roll it and place it in the fridge for 2 hours. Serve it with salad. ENJOY!







Tiramisu without eggyolk

Soletillas. I do the soletillas at home, but I saw in youtube (I forgot where....) that there is no need to make it in soletilla shape. I just make a big rectangle, and cut it as the shape of the mold is needed.

Soletillas

3 eggs separated
110 grams of sugar
100 grams of flour
1/2 teaspoon of baking powder

Beat the egg white until foamy. Add the sugar and beat it until it is very hard. Slowly incorporate the egg yolk. Add the dry ingredients previously sifted. Place it on a parchment paper. Bake it at 350F until is baked. let it cool.

Filling

225 grams of mascarpone cheese
200 grams whipping cream
4 gelatin sheets
2 double shot espresso fresh made for the filling
sugar at your taste

Beat the whipping cream until firm. Add powder sugar to your taste, and set aside.

Place the gelatin sheets in cold water until they are hydrated. Place it with the espresso, and warm them both until they are dissolved. Beat the mascarpone with the coffee mix, and mix it  with the whipping cream, Set aside.

Make 2 double shot espresso fresh made for the soletillas. add sugar to your taste.

Cut the soletillas to your mold. On top, ad some espresso to make it humid. Ad the tiramisu filling. Place another layer of soletilla and repeat again. Cover it with a soletilla with some coffee on top. Place it in the fridge for 2 hours before serving. ENJOY!

Este año nos ha enseñado muchas lecciones y estamos agradecidos por esa oportunidad. Hemos detenido nuestra ajetreada vida, nos hemos quedado en casa, conectados con los demás y, lo que es más importante ... conectados con nosotros mismos ...

Una nueva luz está brillando hoy ... un gran futuro brillante está en la esquina ... como es arriba es abajo ... como dentro es fuera ...

Comencemos este nuevo comienzo trayendo amor a los demás compartiendo nuestra comida ... ayudemos a los demás y ayudémonos a nosotros mismos ...

Samosas de India!

 



Amo las samosas, y nunca las había hecho antes ... ¡¡esta no será la última vez !!

Samosa

masa
2 tazas de harina
1 cucharadita de sal
1 cucharadita de semillas de Carom
5 cucharaditas de aceite
140 ml de agua

Mezclar todos los ingredientes y amasar durante 6 minutos o hasta obtener una masa suave. Ajusta el agua. Deje reposar tapado durante al menos 30 minutos pero no más de 1 hora.

Relleno
650 gramos de patatas hervidas en trozos
3 cucharadas de aceite
3 Ajos picados
1 pieza de jengibre picado 2,5 cm
2 cucharaditas de semillas de comino
1/2 cucharadita o más de cúrcuma
pimienta
1/2 taza de guisantes verdes
2 chiles verdes picados
2 cebollas picadas
1 cucharadita de semillas de nigella
sal
1 1/2 cucharadita de chile rojo en polvo
1 1/2 cucharadita de hojuelas de chile rojo
Jugo de 1/2 limón
1 cucharadita de cilantro en polvo
4 cucharadas de agua

Caliente el aceite y agregue la cebolla, el ajo, el jengibre y el comino. Déjalo cocer durante 5 minutos. Agrega el agua y el resto de las especias. Añadir las patatas y los guisantes. Dejar cocer durante 6 minutos para infundir las especias. Deja enfriar.

Dividir la masa en 10-12 piezas. Haz un círculo con un alfiler y hazlo en dos partes. Haz un cono y rellénalo con el relleno de patatas. Fríelos en aceite caliente y sírvelos con chutney de cilantro y menta. ¡DISFRUTAR!









 

Samosas



I love samosa, and I have never made them before.....this is not going to be the last time!!

Samosa

dough
2 cups   flour  
1 tsp Salt                          
1 tsp Carom seeds        
5 tsp oil         
140 ml water                       

Mix all the ingredients and knead for 6 minutes or until you have a soft dough. Adjust for water. Let it rest covered for at least 30 minutes but not more than 1 hour.

Filling
650 grams boiled potatoes   in pieces
3 tbsp  oil             
3 Garlic chopped
1 piece ginger chopped 2.5 cm
2 tsp cumin seeds 
1/2 teaspoon or more of turmeric
pepper 
1/2 cup of green peas                     
2 green chilies  chopped
2 onion chopped
1 tsp nigella seeds            
salt                           
1 1/2 tsp red chili powder       
1 1/2 tsp red chili flakes           
1/2 lemon juice               
1 tsp coriander powder 
4 tbsp of water   

Heat the oil, and add the onion, garlic, ginger, and cumin. Let it cook for 5 minutes. Add the water, and the rest of the spices. Add the potatoes and the green peas Let it cook for 6 minutes to infuse the spices. Let it cool. 

Divide the dough in 10-12 pieces. Make a circle with a roll pin, and dived it in two pieces. Make a cone, and fill it with the potatoes filling. Fried them in hot oil and serve with cilantro-mint chutney. ENJOY!
