Orangettes / Candied Orange Peel with Chocolate







This is one of my favourites....
5 large unwaxed thick-skinned oranges
800 grams of sugar
300 grams of dark chocolate
Water
Wash the oranges. Cut the ends off of the oranges, and score the peel from one end to the other keeping as much as possible of the white-side of the zest. Slice the peels into strips (0.5 cm wide each strip) and trim the edges Weight them. Place them in a bowl, cover with water and leave them overnight. Drain them after 10-12 hours.
Place the peels in boiling water and blanch them for five minutes. Repeat it three times. This process will eliminate the bitterness of the peels. Drain them. Place the peels in a large pot, and distribute them as flat as possible. Cover them with sugar. I use 1.5 times of sugar of the weight of the orange peels. For example, If I have 500 grams of orange peels, then I use 750 grams of sugar. Sprinkle a little bit of water (few drops), and simmer them until the sugar is dissolved (medium temperature). Bring the temperature to low, and test the syrup with a spoon. When the syrup in the spoon forms a long thread, the peels are ready. It takes about 25 minutes. A second option will be to prepare syrup by mixing water and sugar in a sauce pot, bring them to simmer and place the peels in the pot for about 1 hour. In my opinion, this second method takes longer and fills with too much water the peels.
When the peels are ready (cooked and translucent), remove them from the pot, and put on a rack to cool them. Once they are cool, you can start dipping them in a melt chocolate.
To melt the chocolate, I use a double boiler. Dip the candied orange peels, flip them with two forks in the chocolate, remove them, and place them over a tray with aluminum foil. Place them in the freezer for five minutes, take them out of the aluminum foil and store them in an airtight container or the fridge.

Berlines



Ingredientes: (para 12 piezas)
300g de harina
4 cucharaditas de levadura (yo uso rápido aumento)
75 ml de leche
3 huevos
70g de mantequilla
90 g de azúcar
1 pizca de sal
Ralladura de limón (medio limón)
1 paquete de pudín de vainilla (o su crema favorita),  mermelada o dulce de
leche.
Azúcar flor para espolvorear
Aceite de cocina para freír (yo uso canola)
Preparación:
Preparar pudín de vainilla o su crema favorita. Mantenga en el refrigerador.
Calentar la leche y agregar una cucharadita de azúcar. Disolver la levadura dejarla leudar  en un lugar tibio hasta que la espuma se forme.
Con una batidora, bata los huevos y el azúcar durante cinco minutos. Añadir  la mantequilla derretida y la ralladura de limón. Continuar con la batidora y añadir la sal y la harina cernida a la mezcla. Añadir la levadura y leche. Trabajar la masa durante unos 6 minutos con la mano hasta que la mezcla sea homogénea (es más fácil ponerlo en una superficie
con harina) y no se queden en sus manos. Cubra y deje crecer la masa una hora (debe ser el doble en volumen). En una superficie enharinada, extienda la masa y pasele un rodillo para dejarla a un espesor de un centímetro. Cortar círculos de 5 cm de diámetro (yo uso una taza de té para cortarlas). Colocar los círculos en una superficie que no se pegue hasta que crezcan como una bola de tenis (60-90min).
Caliente el aceite a fuego lento en una olla o sartén (no más de 2 cm de profundidad). Depende del tamaño de su olla / cacerola, se puede freír 2-3 piezas al mismo tiempo, pero nada más. Cuando se doren por abajo, delos vuelta. Cuando esten dorados por ambos lados, retirar y escurrir sobre un pedazo de toalla de papel (se verá en el medio una línea blanca que es típico de estos pasteles). Dejar enfriar.
Con un cuchillo afilado, cortar cada pieza en el centro. Llene con crema inglesa , su mermelada preferida o el dulce de leche. Espolvorear con azúcar en polvo .... Y Voila .... A disfrutar!
Dos consejos que he aprendido después de cinco veces haciéndolos:
1) Poner el aceite sólo para cubrir la mitad de la altura de las bolas. Así, tendrá el "cinturón blanco" .
2) Utilice la superficie antiadherente para ponerlos a leudar la segunda parte. Tener cuidado cuando los saque, ya que tiende a perder las burbujas y se aplanan. No utilice harina sobre la superficie para hacer el proceso más fácil;
de lo contrario, no subirán correctamente

Boules de Berlin


Ingredients: (for 12 pieces)
300g of flour
4 teaspoons of yeast (I use quick-rise)
75 ml milk
3 eggs
70g butter
90g sugar
1 Pinch of salt
Lemon zest (half lemon)
1 package vanilla pudding (or your favorite custard), or jam or dulce de leche.
Icing sugar for dusting
Cooking oil for frying(I use canola-oil)
Preparation:
Prepare vanilla pudding or your favorite custard. Keep refrigerated.
Warm the milk, and add a teaspoon of sugar. Dissolve the yeast in. Let it rise in warm room until foam is formed.
With a mixer, beat the eggs and sugar for five minutes. Add melt butter, and lemon zest. Continue with the mixer and add salt and sifted flour to the mixture. Add the yeast/milk. Knead the dough for about 6 minutes until the mixture is homogeneous (it is easier to put it on a surface with flour) and do not stick in your hands. Cover and let dough rise for one hour (it should be double in volume). On a floured surface, roll dough with a rolling pin to a thickness of one centimeter. Cut circles of 5 cm in diameter (I used a cup of tea to cut them). Place the circles in a non-stick surface until they grow like a tennis ball (60-90min).
Heat the oil over low heat in a pot or saucepan (no more than 2 cm deep). Depends on the size of your pot/saucepan, you can fry 2-3 pieces at the same time, but no more. When they get brown under, turn them. When browned at both sides remove and drain on a piece of paper towel (you will see in the middle a white line that is typical from these pastries). Let them cool.
With a sharp knife, cut each piece in the middle. Fill them with custard or your favorite jam or dulce de leche. Sprinkle with icing sugar….and Voila….enjoy them!!!
Two tips that I learned after five times making them:
1) Put oil only to cover half of the height of the balls. Thus, by turning them, you will have the “white belt” in the middle of the Berliner.
2) Use non-stick surface to let them rise the second time. Be careful when you take them out because it tends to loose the bubbles and get flatter. Do not use flour on the surface to make the process easier; otherwise, they will not rise properly (the yeast will go down)

Doing my share in the blogosphere


Since I arrived in North America (2002), I am a fanatic blog follower. I have benefited so much from other’s personal experience, cooking, parenting, and travelling tips that I decided that is my time to enter the blog world and make my contribution. I might be a newbie to blogging, but definitely I am not a newbie to food, travel and wine…..
My passion for food started while ago in the kitchen of my Grandma (Nonna). The smell of fresh herbs, ripe tomatoes, olive oil and parmiggiano cheese in Nonna’s kitchen drove my taste for fresh and seasonal ingredients. While I was university student away from home, my cooking was experimental (and of course a survival experience). However, my cooking was transformed in my passion when I started to travel and taste different foods. Since 1994, I have travelled over forty countries for work, pleasure and food. In each of them, I have found new friends, discovered new tastes, learned about other cultures, visited amazing places, and shared local wines and beer. Today, living among people from different cultures, I consider myself a world-member that appreciates the beauty and contribution of each country through their cooking. I hope one day we can live on peace……or at least eat on peace!!
This blog will not be only about food (my first passion), travel and wine. It will also be about sharing my journey in this lovely planet. I think the more we appreciate each other, the better we are….. Contribuyendo al mundo de los blog


Desde mi llegada a América del Norte (2002), soy una fanática seguidora  de los blog. Personalmente, me he beneficiado de las experiencias personales de otros, su cocina, crianza de los hijos, y consejos de viajes, que decidí que es mi hora de entrar en el mundo blog y hacer mi contribución. Es cierto que soy una novata en los blogs, pero definitivamente  no soy novata en disfrutar las comidas, los viajes y el vino …..
Mi pasión  por la comida comenzó en la cocina de mi abuela (Nonna). El olor de las hierbas frescas, tomates maduros, aceite de oliva y queso parmesano moldeó mi gusto por la cocina, sobre todo usando productos de temporada. Mientras era estudiante universitaria lejos de casa, mi cocina fue experimental (y por supuesto una experiencia de supervivencia). Sin embargo, mi cocina se convirtió en mi pasión, cuando empecé a viajar y degustar diferentes comidas. Desde 1994, he viajado por más de cuarenta países por trabajo,  placer y por supuesto para probar nuevas comidas. En cada uno de ellos he encontrado nuevos amigos, descubierto nuevos gustos, aprendido acerca de otras culturas, visitado lugares increíbles, y compartido vinos y cervezas locales. Hoy en día, viviendo entre personas de diferentes culturas, me considero un ciudadano del mundo que aprecia la la belleza y la contribución de cada país a través de su cocina. Espero que un día podamos vivir en paz …… o por lo menos comer en paz!
Este blog no será solo de comida (mi primera pasión), los viajes y vino. También se trata de compartir mi viaje en este planeta hermoso. Mientras más compartimos y más nos apreciamos mejor estamos ….. Espero que disfruten de este blog en Inglés  y Español, mi cocina y mis aventuras como un simple ser humano en este encantador planeta. Bienvenido!
