Ultima Parte de Nuestras Vacaciones.....Compartiendo Nuestros Recuerdos......


Hemos estado muy ocupados este verano ....... No sólo la mudanza nos tiene locos, sino también las actividades de verano para mi hija ..... clases de natación, clases de ballet, y visitas a museos me han hecho una experta conductora a lo largo de la ciudad ..... he estado cocinando, pero sin tiempo para publicar nuestras comidas de verano ..... Después de este post, voy a empezar a publicar nuestras comidas de nuevo ..... higos están llegando!

Uno de mis amigos me pidio que escribiera más sobre Disney ......

Como he mencionado antes, nunca pensé  ir a DisneyWorld, sin embargo,fue una experiencia maravillosa.

Visitamos los cuatro parques temáticos: Magic Kingdom, Epcot, Animal Kingdom, y los Estudios de Hollywood.

Hollywood Studios

Para nosotros, los estudios de Hollywood, junto con Magic Kingdom fueron los menos atractivos. Sin embargo, EPCOT y Animal Kingdom fue muy interesante y divertido para nosotros.


EPCOT

EPCOT muestra11 países, su cultura y su comida. Habíamos visitado esos países antes, y tengo que admitir que cada pabellón refleja fielmente la realidad de cada país.

Quedamos muy impresionado con la comida de cada país ..... es como comer en el país de origen !.... No obstante, lo que más nos impresionó, era la comida en el pabellón de Francia .... Olala !

Animal Kingdom fue también muy bueno. No muestra sólo los animales, sino que también recrea su entorno! ... De verdad nos sentimos que estábamos en un safari africano

Last Part of our Holidays.....Sharing Our Memories......


I have been very busy this summer.......Not only the moving is driving me crazy, but also the summer activities for my daughter.....swimming lessons, ballet classes, and museums visits have made me an expert driver throughout the city.....I've been cooking, but without time to posting our summer meals.....After this post, I will start to post our meals again.....figs are coming!!

One of my friends asked me to write more about Disney......

As I mentioned before, I never thought to go to DisneyWorld; however, it was a wonderful experience.

We visited the four theme parks: Magic Kingdom, EPCOT, Animal Kingdom, and Hollywood Studios.

Hollywood Studios

For us, Hollywood Studios along with Magic Kingdom were the less appealing. However, EPCOT and Animal Kingdom were very interesting and fun for us.
EPCOT

EPCOT showcase 11 countries, their culture, and their food. We had visited those countries before, and I have to admit that each pavilion truly reflects the reality of each country.

I was very impressed with the food of each country.....they taste as in their country of the origin!....Nevertheless, what impressed us the most, was the food in the pavilion of France....OLALA!!

For us, EPCOT was more than what we expected!

Animal Kingdom was also very good. It showcases not only animals, but also it recreates their environment!...We truly felt that we were in an African Safari

Spanakopita, Feta y Camarones en Masa Filo...y Comiendo en Heritage Festival....

Finalmente, he tenido algún momento para escribir en este blog y visitarlos..... Ha sido un verano muy ocupado, no sólo por la mudanza, sino también por los festivales. Edmonton (la ciudad donde vivimos) es considerado la Ciudad de los Festivales de  Canadá con más de 30 eventos cada año. Estos eventos se realizan principalmente en el verano, por lo tanto, todo el mundo disfruta cada semana de un festival diferente antes de la llegada del invierno ...... donde tenemos -30C .... brrrrrrr!


De los muchos festivales que disfrutamos, el que más nos gusta es el Heritage Festival (Festival del Patrimonio o de la Herencia). Este año fueron  62 pabellones que representaron  85 culturas de todo el mundo. Una vision de este festival puede leerlos en las entradas del 2010 Heritage Festival (I)Festival de la Herencia (II),y el Festival de la Herencia (III).

El Heritage Festival fue el primer lugar que nos introdujo a la comida de otros paises. Hemos sido afortunados pues desde nuestra llegada a Canadá, hemos podido disfrutar de la comida de todo el mundo, y por supuesto, la hemos incorporado en nuestra alimentación diaria. Uno de los pasteles Griegos que probamos por primera vez aquí en Canadá fue Spanakopita .... y por supuesto .... nos encanto!



Spanakopita
700 gramos de espinacas (lavadas y picadas)
2 cebollas (picadas)
1 / 2 taza de perejil y cada uno de eneldo fresco (lavadas y picadas)
300 gramos de queso feta (desmenuzado)
200 gramos de ricota (para añadir cremosidad)
4 huevos
Aceite de oliva
La sal del mar, pimienta negra, nuez moscada
La mantequilla (derretida)
1 paquete de pasta filo (unos 500 gramos) descongelado
En una sartén grande caliente el aceite de oliva y añadir la cebolla hasta que estén transparentes. Incorporar la espinaca, el perejil y el eneldo. Cocinar por unos 7 minutos. Añadir la sal marina, pimienta negra, y la nuez moscada. Esta mezcla debe ser seca. Deje que se enfríe.
En un tazón, mezcle el queso feta, ricotta y los huevos. Incorporar la mezcla de espinaca (tiene que estar fria). Mezclar bien.
En un tazón, mezcle la mantequilla derretida con el aceite de oliva (yo uso mitad y mitad). 
 Retire la pasta filo del paquete. Yo uso una tijera para cortar cada hoja por la mitad, y luego doblar por la mitad para formar un rectángulo largo. Con el fin de evitar que se seque y se quiebre, la cubro con un paño de cocina ligeramente húmedo.
Tome un largo rectángulo de pasta filo, y con una brocha de pastelería, pintar con la mezcla de aceite de oliva y la mantequilla.
Toma alrededor de 1 cucharada grande de la mezcla de espinaca, y lo pone en una esquina. Empiece a  plegar el rectángulo como una bandera para hacer una forma de triángulo. Se cubre con más mantequilla derretida con el aceite de oliva.
Póngalos en el horno precalentado a 375F durante 30 minutos, o hasta que estén doradas. DISFRUTE! 
 
 
  


Y ..... ¿Qué pasa si tengo más hojas de masa filo, como queda?
Preparar una bechamel espesa, agregue un poco de queso feta, queso parmesano, sal, pimienta. Agregue unos  camarones salteados en aceite de oliva con orégano. Mezclar bien. Tome un largo rectángulo de pasta filo, y con una brocha de pastelería, pintar con la mezcla de aceite de oliva y la mantequilla. Toma alrededor de 1 cucharada grande de la mezcla de camarones, y lo pone en una orilla. Doble el rectángulo como un cigarro. Se cubre con más mantequilla derretida con el aceite de oliva.
Póngalos en el horno precalentado a 375F durante 30 minutos, o hasta que estén doradas. DISFRUTE!

Feta and Shrimps in Phyllo Dough

Finally, I had sometime to write in this blog. It has been a busy summer not only for the moving, but also for the festivals. Edmonton (the city where we live) it is considered the Festival City of Canada with more than 30 events every year. These events are mainly in the summer; therefore, everybody enjoy every week a different festival before the arrival of the winter......where we have -30C....brrrrrrr!!

Of the many festivals that we enjoy, the one that I like the most is the Heritage Festival. This year were 62 pavillions representing 85 cultures from all over the world. The Heritage Festival was the first place that introduced us to food from other countries. We have been lucky that since our arrival to Canada, we have been enjoying food from all over the world, and of course, we have incorporate them in our daily meals. One of the Greek pastrys that we tried for the first time here in Canada is Spanakopita....and of course....we felt in love with it!!

700 grams of spinach (washed and chopped)
2 onions (chopped)
1/2 cup of each parsley and fresh dill (washed and chopped)
300 grams of feta cheese (crumbled)
200 grams of ricotta (to add creaminess)
4 eggs
Olive oil
Sea Salt, black pepper, nutmeg
Butter (melted)
1 package of phyllo pastry (about 500 grams) defrosted

In a deep pan, heat the olive oil and add the onions until they are translucent. Incorporate the spinach, parsley, and dill. Cook them for about 7 minutes. Add sea Salt, black pepper, and nutmeg. This mixture should be dry. Let it cool.
In a bowl, mix the feta, ricotta, and eggs. Incorporate the spinach mixture (it has to be cool). Mix it well.
In a bowl, combine melted butter with olive oil (I use half and half).
Remove the phyllo pastry from the package. I use a scissor to cut each sheet in half, and then fold it in half to make a long rectangle. In order to avoid them to dry it and crackle it, I cover them with a kitchen towel slightly humid.
Take a long rectangle of phyllo pastry, and using a pastry brush, paint it with the mix of olive oil and butter.
Take about 1 big tablespoon of spinach mixture, and put it in a corner. Star folding this rectangle like a flag to make a triangle shape. Cover it with more melted butter with olive oil.
Put them in a preheated oven at 375F for 30 minutes, or until golden brown. ENJOY!
 
 
  


And .....What if I have more phyllo sheets as left over?
Prepare a thick béchamel, add some feta cheese, parmiggiano cheese, salt, pepper. Add some shrimps sautee in olive oil with oregano. Mix them well. Take a long rectangle of phyllo pastry, and using a pastry brush, paint it with the mix of olive oil and butter. Take about 1 big tablespoon of shrimp mixture, and put it in a corner. Star folding this rectangle like a cigar. Cover it with more melted butter with olive oil.
Put them in a preheated oven at 375F for 30 minutes, or until golden brown. ENJOY!
