There are food combinations that I like, and there are food combinations that I LOVE!!....blueberries and lemon are heavenly to me!
Blueberry Ice Cream
450 grams of cream (35%)
240 grams of milk
100 grams of sugar
3 tablespoons of milk powder
Mix everything together and cook over medium low heat until thick. Let it cool.
250 grams of frozen or fresh blueberries
3-4 tablespoons of sugar
a dash of vanilla essence
Place everything together in a pot, and let it simmer for 5 minutes. Let it cool.
In a blender, place the custard with the blueberry confit. Place this mixture in an ice cream maker for 30 minutes, until gets the appropriate ice cream texture. Set aside in the freezer.
Lemon curd ice cream
200 grams of sugar
120 grams of butter
Juice of 4 big lemons
300 grams of whipping cream (35%)
Melt the butter, and add the sugar and the juice of 4 lemons. Mix it well at low temperature. Add eggs one by one, and increase the temperature a little bit to make the curd to thick it. Beat it constantly until is firm. Set aside. Let it cool.
Beat the whipping cream until is firm. Slowly combine it with half of the lemon curd. Set aside.
In an ice cream container, place a layer of blueberry ice cream, and then a layer of lemon curd. Continue until you finish. Place it in the freezer for 6 hours. ENJOY!
