Mumbai Masala Sandwich





I know everybody know something about Indian food, but not many know about Indian sandwiches. Last year we went again to India, and visited Mumbai. Within India, Mumbai is a multi-diverse world not only because holds in that small island a sample of all Indian religions (including Zoroastrian), but also because its diverse food. We felt in love with its sandwiches....and now we are trying them at home

Mumbai Masala Sandwich

White Sliced bread. I make my own sliced bread. For 2 loaves

600 g strength flour
6 g salt
15 g sugar
2 tablespoon milk powder (or 13 grams of milk powder)
7 g instant dry yeast (or 2 teaspoons)
280 g water
2 eggs
2 tablespoons sourdough (optional)

    
In the mixer or by hand, we put all the ingredients and knead 10 minutes.
Leave to rise for 1 hour. Divide the dough into two balls. Roll the dough into a rectangle with the rolling pin and roll. Put in an oven mold previously greased with oil. Let rise 1 hour and bake at 350F for 20 minutes.



Potato sabzi

6 boiled potatoes
Ghee or oil
1/2 teaspoon of Turmeric
1/2 teaspoon of mustard seeds
Some curry leaves
1/2 teaspoon of cumin
1/2 cup of green peas
Some chopped coriander
Salt

Heat the ghee or oil. Add the mustard seeds, when it starts to pop, add the cumin and curry leaves. Add boiled potatoes mashed, the green peas, and mix it well. Correct it for salt. Add chopped coriander.



Cilantro Chutney

1 cilantro
2 garlic cloves
1 green chili
1 teaspoon of cumin
1/2 lemon juice
salt 
some olive and some water to blend only

Tomato slices

Red onion or shallots

Green Bell Pepper

Butter

Place two slices of bread. Add butter to both sides, then add cilantro chutney to both sides. Then to one side, you will start to making the sandwich, Make a patty with the potato sabzi and put it on top. Add a tomato slice, red onion, green bell pepper, add some salt and some masala powder, and add some grated cheese. Place the other half and grill it.....ENJOY!
