Peach and Lavender Tart


Every summer, I make a tarte from the Chef Bruno Albouze. His youtube channel (https://www.youtube.com/c/BrunoAlbouze) is wonderful, and have delicious recipes!

I made this recipe with some minor changes, and we loved it!!

Peach and Lavender Tart

Dough: I ended up with 1 big tart and 3 small ones.
 150 g Butter
 2 g Salt
 75 g Powdered sugar
 75 g of Almond flour (He uses Hazelnut meal)
1 Eggs 
 210 g All-purpose flour
 1 teaspoon Baking powder

Lavender Ganache Montée
 140 g Heavy cream, hot
 140 g Heavy cream, cold
 3 g Lavender greens, or powder. I used 1 teaspoon of lavender flowers.
 2.50 g Gelatin sheets
 60 g White chocolate

Vanilla Custard
 2 Eggs 
 90 g Sugar
 1 g Salt
 5 g Vanilla paste
 30 g Flour
 125 g Milk
 125 g Heavy cream
3 peaches

Topping
4 peaches 

Dough: Combine all the ingredients, and let it rest for 20 minutes in the fridge. Place it in a tart mold, and bake it with a parchment paper with beans on top at 165C for 20 minutes. Remove the weight, and bake it for another 15 minutes. Take it out, and let it cool.

Custard: Wash, peel of, and dice the peaches, and place it on the crust. Combine all the remaining ingredients, and place it over the crust. Bake it at 165C for 20 minutes, or until the flan is set. Take it out, and let it cool.

Cream: Place the gelatin in cold water.  Place 140 grams of cream with the lavender flowers, and simmer it for 10 minutes. Strain it, and place it over the white chocolate for melting it. Dissolve the gelatin, and add it to the lavender cream. Let it cool down, but not totally. We want it soft, but not hard. Beat the remaining cream until is whipped. Mix it with the lavender cream. Place it on top of the tart, and decorate it with fresh sliced peaches. ENJOY!!

  2. Fresh Niagara peaches are now available here. We usually eat ours whole and only rarely make a pie.

  3. OMG! Peach and lavender is such a wonderful combination. I love both flavors and the vanilla custard looks absolutely delicious. We will be getting local peaches soon and looking forward to peach recipes.
