Thanksgiving Dishes......(II)


One of the things that I do like the best of this special day is to cook with pumpkins. Pumpkins are so versatile that can be used in either sweet or salty dishes, and the result is always fantastic. 

This year, we wanted to try new dishes. Therefore, we used the kitchen network from around the world, and we end up cooking dishes from blogs from Chile, Costa Rica, and Spain. I think it was a good idea to eat dishes with the products used this day, but from countries all over the world. It reflects who we are, where we live, and that cooking has no boundaries......

From all the pumpkins we found, we chose Kabocha pumpkin to prepare all dishes. It turns out to be a great pumpkin for all these treats.

I decided to use Quinoa this year to show our Latin American roots. I started to eat Quinoa about 15 years ago. At that time, it was difficult to find, and I did not have many recipes to try it. Nevertheless, when I arrived to Canada, I was surprised to find it in every supermarket. Therefore, I started to consume it regularly and try new dishes every time. I found that Quinoa is very versatile, since it has not a strong flavour, Quinoa can be equally adapted to salty and sweet dishes, and can be combine with different spices. However, this is the first time I use red Quinoa. 

I forgot to mention that there are many vegetables that are traditional to use in this day. Some of these vegetables are broccoli, cauliflowers, green beans, brussels, carrots, and corn. Therefore, I included them in these creations.

Warm Vegetables Salad with Red Quinoa

Warm Vegetables Salad with Red Quinoa

1 cup of Red Quinoa
2 cups of water

2 cups of mix of vegetables (I used a frozen vegetables mix): carrots orange and yellow, broccolis, cauliflowers
Turmeric
Cumin
Fresh ginger (a small piece 2 cms grated)
1 Onion chopped
Garlic (2 cloves)
Lemon juice
Olive Oil
Salt
Pepper

Cook the quinoa with water for 15 minutes. Gently fluff the quinoa with a fork, and let it cool. 

In a pot, heat olive oil and fry the onion, ginger and chopped garlic. Add turmeric. Incorporate the frozen vegetables and cook them for 15 minutes at medium heat. If you see that the pot is too dry, then add a little bit of water. Add cumin, salt, and pepper. Once they are cooked, mix it with the red quinoa (reserve some of the red quinoa for decoration). Add lemon juice and olive oil at your taste, serve and decorate with red quinoa on top. Enjoy!! 
"Ugly but Tasty" Quinoa, Beans and Veggies Cream

My daughter said about this soup...."Mom this is an ugly soup, but very tasty...."....Now we call it that way.

1 cup of Quinoa
2 cups of water

2 cups of mix of vegetables (I used a frozen vegetables mix described above), plus frozen corn and frozen peas.
1/3 of a cup of red beans
1/3 of a cup of white beans 
1/3 of a cup of brown beans
Turmeric
Cumin
Coriander
Fresh ginger (a small piece 2 cms grated)
1 Onion chopped
Garlic (2 cloves)
Olive Oil
Salt
Pepper

Cook the quinoa with water for 15 minutes. Gently fluff the quinoa with a fork, and let it cool. 

Soak each type of beans overnight. Cook them separately in a small amount of water, and reserve the water once they are cooked. In a pot, heat olive oil and fry the onion, ginger and chopped garlic. Add turmeric. Incorporate the frozen vegetables and cook them for 15 minutes at medium heat. Add the water of the cooked beans. Add cumin, salt, and pepper. Once they are cooked, mush them with a big fork. Incorporate the beans and the quinoa. Let them simmer for 15 minutes. Serve and add olive oil on top at your taste. Enjoy!! 

Lubyi bi Zayt (Jordan)

Lubyi bi Zayt is a very simple and tasty dish that we taste in Jordan. We really like it!

500 grams green beans
1 onion chopped
2 garlic cloves (chopped)
4 chopped tomatoes
2 tablespoon tomato paste
1/2 cup of water
Pinch of sugar
Salt
Pepper
Olive oil
Chopped Parsley

Trim beans and cut them in medium size pieces. In a pot, heat olive oil and fry the chopped onion and garlic. Add the tomatoes and tomato paste. Incorporate the water, salt, sugar and pepper. Simmer for 7 minutes. Add the green beans, and simmer until they are tender. Before serving add the chopped parsley and mix. Serve warm. Enjoy!! 
Brussels with Almond and Lemon Peel

This is the last dish.....I just cook brussels for Thanksgiving.....I don't like them!!.....Nevertheless, I have to admit that this dish was fine.....I think the lemon peel change the taste that I don't like. Rarely, you will see dishes with brussels in my blog....

2 cups of fresh brussels
Lemon peel
Lemon Juice
Olive oil
1/4 cup of sliced almonds
Salt 
Pepper

Toast the almonds and reserve. Cook the brussels in hot water until they are half way cooked. Drain them, and when you can touch it cut them in half. Mix it with lemon peel, lemon juice, salt, pepper, almonds, and olive oil. Place it on an ovenproof dish, and put it in a oven for 15 minutes. I can't say Enjoy!!.....I will say "Eat it if you want!"

Platos de Accion de Gracias......(I)


Quería publicar estas recetas antes, pero comprenderá que todo mi tiempo libre me dedico a ver el milagro del rescate de los mineros….y me atrase con este blog y otras cosas. Estamos muy contentos con la salida con vida de los mineros!!

Voy a empezar con una mezcla de las recetas que he hecho de otros blogs, y mis propias recetas.

Desde que vi el pastel dulce de ayote, yo sabía que lo tenía que hacer. Fue la mezcla de ingredientes que lo hizo atractivo para mí. El único cambio que he hecho fue decorar con almendras partidas. El resultado es un postre aterciopelado de sabor delicioso.

He hecho diferentes platos con quinua. La quinua es un grano maravilloso con un valor nutricional increíble. Es alto en proteinas,  lisina, aminoácidos esenciales, hierro, magnesio y fósforo. Se sabe que contribuye al desarrollo del cerebro. El agua de la cocción ayuda a las madres que están amamantando a producir más leche. Sin embargo, antes de cocinar la quinoa, lea cuidadosamente el paquete para las instrucciones de cocción. La quinua tiene que ser lavado muchas veces antes de cocinar porque tiene una capa alta en saponina. Sin embargo, puede comprar uno que sea pre-lavado, que es fácil para cocinar.

 
 

Esta es una receta muy fácil. He hecho la quinua al estilo de Medio Oriente con un estofado de verduras al estilo de la India.

Quinoa

1 taza de quinoa (lavarla antes de cocinar si no es pre-lavada)
2 tazas de agua
Sal
Aceite de oliva
Menta (he usado 7 hojas)
Perejil (he usado la mitad de un atado)
El jugo de limón (1 / 2 limón)
Comino

Cocine la quinua en agua hirviendo con sal a fuego muy bajo (cubra la olla con tapa).Se tarda unos 15 minutos para absorber el agua y cocinarse. 
Suavemente separe la quinua con un tenedor. Agregue la menta picada, el perejil, sal, aceite de oliva, jugo de limón y el comino. Ajuste la sal.

Estofado de verduras

1 coliflor
1 / 2 taza de guisantes congelados
1 / 2 taza de maíz congelado
5 tomates (picados) o 1 lata de tomates
Sal
Jengibre (un pequeño trozo)
1 / 2 cucharadita de semillas de cilantro
1 / 2 cucharadita de comino semillas
Cúrcuma
1 cebolla
2 dientes de ajo
Aceite
Chile en polvo
Cilantro para la decoración

Tostar las semillas de cilantro, y dejar de lado. 
Tostar las semillas de comino, y dejar de lado. Molerlos. En una olla con agua hirviendo, cocinar la coliflor hasta que esté "al dente", sólo parcialmente cocidos. Escurrir y reservar.

En una olla, calentar el aceite y añadir los trozos de la cebolla y el ajo. 
Cuando la cebolla esté translúcida, añadir la cúrcuma, y semillas molidas de cilantro y comino, la sal y el chile en polvo. Añadir los tomates, y deje que se cocine a fuego lento durante 5 minutos.Ajustar la sal y el chile. Añadir el maíz, los guisantes congelados, y la coliflor en ramilletes. Dejar cocer durante 30 minutos. Sirva con cilantro picado. Disfrute



Esto también es una receta muy fácil. He hecho pasteles de quinua Mediterráneos e Indios con guiso de verduras y anchoas

Pastel de Quinua
1 taza de quinua
2 tazas de agua
2 huevos
Sal
Pimienta
Hierbas de la Provenza
1 diente de ajo (muy pequeño)
Semillas de comino
Semillas de cilantro
Cúrcuma

Cocine la quinua con agua durante 15 minutos. Suavemente separe la quinua con un tenedor y deje que se enfríe. Divida la quinua por la mitad en dos bols. En un bol, añadir un huevo, sal, pimienta, hierbas de la Provenza, y el diente de ajo finamente picado. Mezcle con la quinua. Hacer pasteles pequeños y ponerlos en una bandeja de horno que ha sido engrasado con aceite de oliva. Para la otra mitad de la quinua, añadir un huevo, sal, comino molido y semillas de cilantro, y la cúrcuma. Hacer pasteles pequeños y ponerlos en una bandeja de horno que ha sido engrasado con aceite de oliva.

Precaliente el horno a 375F. Coloque los pasteles en el horno durante 12 minutos, y darles la vuelta por otros 12 minutos. Estas tortas no pegan muy bien, pero tienen un muy buen sabor.

Guiso de Verduras y Anchoas

1 berenjena
2 zanahorias (cortadas en círculos)
1 cebolla
2 dientes de ajo
5 tomates o 1 lata de tomates
Aceite de oliva
Alcaparra
Pimienta
Anchoas (1 / 2 lata)
Sal (dependiendo de su gusto. Yo no use por las anchoas y alcaparras)

Cortar la berenjena en cubos, agregue sal y se deja reposar durante 30 minutos. Lávelos y déjelos aparte. En una olla, calentar el aceite y añadir los trozos de la cebolla y el ajo. Cuando la cebolla esté translúcida, agregar los tomates, y deje que se cocine a fuego lento durante 7 minutos. Añadir las alcaparras, anchoas, y las zanahorias. Mezclar bien. Añadir la berenjena, y dejar cocer durante 30 minutos. Servir a un lado de las tortas de quinua. Disfrute!

Thanksgiving Dishes......(I)


I wanted to post these recipes earlier, but all my free time was devoted to watch the miracle of the miner's rescue. We are really happy about it!!

I will start with a mix of the recipes that I have made from other blogs, and my own recipes.

Since I saw a Pastel Dulce de Ayote, I knew I have to make it. It was the mix of the ingredients that was very appealing to me. The only change I made is that I decorate it with slice almonds. the result is a velvety dessert that was fantastic. I have made different dishes with Quinoa. Quinoa is a wonderful grain with an amazing nutritional value. It is high in proteins, lysine, essential aminoacids, iron, magnesium and phosphorus. It is known to contribute to brain development. And the cooked water helps mothers that are breastfeeding to produce more milk. Nevertheless, before making it, read carefully the package for cooking instructions. Quinoa needs to be washed many times before cooking because the coating is high in saponine. However, I buy one that is pre-washed, which is easy for cooking.
 

This is a very easy recipe. I have made the quinoa Middle-East style with a vegetable stew Indian style.

Quinoa

1 cup of quinoa (wash it before cooking if is not ore-washed)
2 cups of water
Salt
Olive oil
Mint (I used 7 leaves)
Parsley (I used half of a bunch)
Lemon juice (1/2 lemon)
Cumin

Cook the quinoa in boiling water with salt at very low heat (cover the pot with a lid). It takes about 15 minutes to absorb the water and be cooked. Gently fluff the quinoa with a fork. Add the chopped mint, parsley, salt, olive oil, lemon juice and cumin. Adjust for salt. 

Vegetable stew

1 Cauliflower
1/2 cup of frozen peas
1/2 cup of frozen corn
5 tomatoes (chopped) or 1 can of tomatoes
Salt
Ginger (a small piece)
1/2 teaspoon Coriander seeds
1/2 teaspoon Cumin seeds
Turmeric
1 onion
2 garlic cloves
Oil
Chili powder
Cilantro for decoration

Toast the coriander seeds, and set aside. Toast the cumin seeds, and set aside. Grind them. In a pot with boiling water, cook the cauliflower until it is "al dente", but not fully cooked. Drain and set aside.

In a pot, heat the oil and add the chopped the onion and the garlic. When the onion is translucid, add the turmeric, coriander and cumin seeds, salt, and the chili powder. Add the tomatoes, and let it simmer for 5 minutes. Adjust for salt and chilipowder. Add the frozen corn and peas, and the cauliflower in florets. Let it cook for 30 minutes. Serve with chopped cilantro on top. Enjoy


This is also a very easy recipe. I have made Quinoa Cakes with Mediterranean Vegetable Stew

Quinoa Cakes
1 cup of quinoa
2 cups of water
2 eggs
Salt
Pepper
Herbs de la Provence
1 garlic clove (very small)
Cumin seeds
Coriander seeds
Turmeric

Cook the quinoa with water for 15 minutes. Gently fluff the quinoa with a fork, and let it cool. Divide the quinoa in half in two bowls. In one bowl, add one egg, salt, pepper, herbs de la Provence, and the garlic clove finely chopped. Make small cakes and put them over a oven tray that has been greased with olive oil. To the other half of the quinoa, add one egg, salt, grinded cumin and coriander seeds, and turmeric. Make small cakes and put them over a oven tray that has been greased with olive oil. 

Preheat the oven to 375F. Put the cakes into the oven for 12 minutes, and turn them over for another 12 minutes. These cakes do not hold together very well, but they taste very good.

Mediterranean Vegetarian Stew

1 eggplant
2 carrots (cutted in circles)
1 onion
2 garlic cloves
5 tomatoes or 1 can of tomatoes
Olive oil
Capers
Pepper
Anchovies (1/2 can)
Salt (depending on your taste. I did not use it)

Cut the eggplant in cubes, salt it and let it rest for 30 minutes. Wash it and set aside. In a pot, heat the oil and add the chopped the onion and the garlic. When the onion is translucid, add the tomatoes, and let it simmer for 7 minutes. Add the capers, anchovies, and carrots. Mix it well.  Add the eggplant, and let it cook for 30 minutes. Serve aside of the quinoa cakes. Enjoy!!

Accion de Gracias....un Necesario Tiempo Para Agradecer...

Temporada de Calabazas.....

Acción de Gracias es un momento para expresar gratitud. Aunque tal vez sea una fiesta de origen religioso, hoy en día es un tiempo especial para celebrar la cosecha antes de la llegada del invierno.

En nuestro primer año aquí en Canadá, para nosotros esta celebración era muy extraña. Para ser honesto, no entendíamos el verdadero significado de Acción de Gracias. Recuerdo que en esa oportunidad, pensamos utilizar el fin de semana largo para preparar algunos exámenes de la Universidad, pero nos invitaron a muchas casas….y no pudimos decir que no. En Acción de Gracias, nadie está solo. Familia, amigos y vecinos se reúnen sólo para decir "Gracias" por la salud, el trabajo, la familia, los amigos, la comida ... sólo por lo que nos da la vida!

Yo diría que esta es la fiesta más importante de Norteamérica .... es un tiempo donde la gente de todas las religiones, razas y culturas celebran los productos de la cosecha antes de la llegada del invierno. Sólo hay una cosa en común entre nosotros ....  decir ¡Gracias!

Aunque, al principio, era una fiesta extraña para nosotros, se ha convertido en una de las celebraciones más importantes de nuestra familia. Hemos tomado este día  hoy no sólo por la propia celebración, sino por el significado que representa. Hay tantas cosas ...... Gracias por la familia aquí y en el exterior .... amigos que están con nosotros, muy lejos, "amigos virtuales" como Ustedes, y otros que ya no se encuentran fisicamente con nosotros ..... salud .... comida .... trabajo .... solo porque existimos .... . ¡Gracias!

Tradicionalmente, se ha convertido en el "día del pavo". Para nosotros que no crecimos con esta tradicion ni somos fans del pavo asado ..... celebramos como muchos nuevos inmigrantes...... con calabaza y algunos productos que nos recuerdan nuestro origen. En este año, hemos compartido delicias de calabaza y debido a nuestras raíces latinoamericanas  hemos preparado para compartir platos de Quinoa. Este año, todos los platos de calabaza viene de sus cocina ...... Me gustaría poder haber hecho más, pero el tiempo es limitado e hicimos lo que pudimos ... Voy a hacer un post especial de agradecimiento a cada uno de los amigos del mundo de los blogs por compartir estos platos calabazas que disfrutamos......por el momento ..... gracias a Annie, CarmenAlfonso y Luis por compartir sus recetas maravillosas y alimentar nuestro espíritu con sus fantásticos platos!

Muchas gracias por permitirme entrar en sus cocinas, por permitirme hacer sus recetas y para hacer todos los días mas brillantes.......
