Tarta de calabacín y Crema de calabaza para Michaelmas

 



Celebramos Michaelmas con comida sencillamente reconfortante.

Tarta de calabacín


Hojaldre

200 gramos de harina

200 gramos de mantequilla fría y picada

100 gramos de agua

Coloque todo en un procesador de alimentos y mezcle bien. Ponlo en el frigorífico durante 30 minutos. Con un uslero, haz un gran rectángulo. Dóblalo en 1/4 para hacer un libro. Ponlo en el frigorífico durante 30 minutos. Repítelo 3 veces.

Cubrir una bandeja de tarta con la masa de hojaldre. Reservar

Relleno de calabacín

1 cebolla picada

2 calabacines en trozos pequeños

2 dientes de ajo picados

Orégano

sal

Pimienta

2 huevos

Queso parmiggiano rallado si quieres

Sofreír la cebolla y el ajo hasta que estén transparentes. Agrega la sal, la pimienta y el orégano. Agrega el calabacín y déjalo cocer. Dejar enfriar y reservar.


Cuando esté frío, coloca este relleno sobre la masa y agrega encima dos huevos batidos. Hornee a 375F durante 20 minutos. En los últimos 5 minutos, agregue el queso parmiggiano reggiano encima. sírvela tibia.


Crema de calabaza


600 gramos de calabaza

3 puerros

2 dientes de ajo

2 zanahorias

100 gramos de garbanzos cocidos

3 cucharadas de aceite de oliva

sal

pimienta

1/2 cucharadita de cúrcuma

1/2 cucharadita de berebere o cualquier especia que quieras usar

500 gramos de agua o caldo de verduras


Pica todas las verduras y sofríelas en aceite de oliva. Agrega las especias. Agrega el caldo, sal y pimienta. Cocine a fuego medio durante 20 minutos. Cuando esté tibio, colócalo en una licuadora con garbanzos. Hazlos puré bien. Sírvelo caliente. ¡DISFRUTAR!

Zucchini tarte and Pumpkin Cream for Michaelmas




We celebrated Michaelmas with simply comfort food.


Zucchini Tarte

Puff pastry

200 grams of flour

200 grams of butter cold and diced

100 grams of water

Place everything in a food processor, and mix it well. Place it in the fridge for 30 minutes. With  roll pin, make a big rectangle. Fold it in 1/4 to make a book. Place it in the fridge for 30 minutes. Repeat it 3 times.

Cover a pie tray with the puff pastry dough Set aside

Zucchini filling

1 chopped onion

2 zucchini in small pieces

2 garlic cloves chopped

Oregano

Salt

Pepper

2 eggs

Parmiggiano grated cheese if you want

Stir fry the onion and garlic until they are translucent. Add the salt, pepper, and oregano. Add the zucchini and let it cook. Let ir cool and set aside.

When it is cool, place this filling over the dough, and add on top two beaten eggs. Bake it at 375F for 20 minutes. In the final 5 minutes, add parmiggiano reggiano cheese on top. serve it warm.


Pumpkin Cream

600 grams pumpkin

3 leeks

2 pieces of garlic

2 carrots

100 grams of cooked chickpeas

3 tablespoons of olive oil

salt

pepper

1/2 teaspoon of turmeric

1/2 teaspoon of berebere or any spice you want to use

500 grams of water or vegetable stock

Chop all the vegetables, and sautee them in olive oil. Add the spices. Add the stock, salt and pepper. Cook it at medium heat for 20 minues. When it is warm, place it in a blender with chickpeas. Puree them well. Serve it warm. ENJOY!

Michaelmas....Pan en forma de Dragon

  



Todo el mundo sabe que lo celebro todo ... Intento incorporar tantas tradiciones en nuestro hogar y nuestra mesa como sea posible. El 29 de septiembre era el día del Arcangel San Miguel, también conocido como la Fiesta de los Arcángeles. Por lo tanto, es un día para celebrar a los Arcángeles Miguel, Gabriel y Rafael, junto con todos los Todos los Ángeles.

¿Qué se come este día? un pan con forma de dragón; así, puedes cortar el pan como lo hizo el Arcángel Miguel. Además, una tarta de verduras y una sopa.


Hice pan de dragón, tarta de calabacín y crema de calabaza.


Pan de Dragón. Adapté esta receta del blog Cypress Space


Ingredientes:


3 tazas de harina para todo uso

1 taza de leche tibia

1 cucharadita azúcar

1,5 cucharaditas levadura seca

2 cucharadas de masa madre

2 cucharadas de mantequilla derretida

1 cucharadita de sal marina

1/2 taza de pasas doradas

1/8 taza de azúcar

1 yema de huevo

1/8 taza de cada una de semillas de girasol y de calabaza. No lo mezcles


Coloque la harina en un tazón grande para mezclar. Dejar de lado.


Mezclar el azúcar y la levadura con la leche tibia. Cuando esté espumoso, agrega la mantequilla junto con la masa madre. Deja esto a un lado.

Coloque el azúcar y la sal juntos en un tazón pequeño. Dejar de lado.

Colocar las pasas, la yema de huevo y las semillas separadas. Déjelos a un lado.


Coloque todos los tazones cerca del tazón grande de harina, encienda una vela y comience a contar esta historia (copiada de Cypress Space y este blog adaptó la historia de All Year Round)


Érase una vez una tierra pequeña y próspera con hermosas colinas, valles, bosques, montañas y gente feliz y trabajadora (esculpe este paisaje en el gran cuenco de harina haciendo un valle en el centro).

Entonces, un día llegó un dragón, espumeante y retorciéndose, para devastar la tierra y dejarla estéril (vierta la levadura de leche tibia en el "valle" y comience a remover para "devastar" el paisaje)

La oscuridad llegó junto con el hielo helado (arroje la sal y el azúcar a la "tierra") y la gente, una vez feliz y tan llena de luz, se volvió incapaz de trabajar o incluso de sonreír. (revuelva y revuelva para mezclar la masa).

Los campesinos volvieron a arar la tierra y sembraron sus semillas (agregue semillas de girasol, continúe mezclando) y pronto las cosechas comenzaron a crecer.

Michael se acercó a la gente y les dijo que fueran valientes y trabajaran duro, que cosecharan el grano cuando estuviera maduro y lo molieran en harina. Les dijo que amasaran la harina para hacer una masa y hornearan el pan, luego que compartieran ese pan con todos ... porque "cada rebanada que se corta en amistad calentará sus corazones y cada pieza que se come le dará fuerza y ​​poder a vencer al dragón "(amasar)

La gente hizo lo que Michael les dijo y, debido a su arduo trabajo y valentía, fueron bendecidos con la prosperidad una vez más. Cantaron una bendición mientras compartían su pan. (¡amasar!)

Michaelmas....Dragon bread..

 



Everybody knows that I celebrate everything....I try to incorporate as many traditions in our home and our table as possible. On September 29th, it was Michaelmas day, also known as the Feast of the Archangels. Therefore, is a day to celebrate Archangels Michael, Gabriel, and Raphael, along with all the All Angels.

What it is eaten this day? a  bread with a shape of a Dragon; thus, you can slice the bread as Archangel Michael did. Also, some vegetable tart and a soup.

I made Dragon bread, zucchini tarte and pumpkin cream.

Dragon Bread. I adapted this recipe from the blog Cypress Space

Ingredients:

3 cups all purpose flour 
1 cup warm milk
1 tsp.  sugar
1.5 tsp. dry yeast

2 tablespoons of sourdough starter

2 tablespoons of  melted butter
1 tsp sea salt
1/2 cup golden raisins 

1/8 cup of sugar
1 egg yolk
1/8 cup of each  sunflower seeds and pumpkin seeds. Don't mix it

Place the flour in a big mixing bowl. Set aside.

Mix the sugar and the yeast with the warm milk. When it is foamy, add  the butter along with the sourdough. Set this aside.
Place the sugar and salt together in a small bowl. Set aside.
Place the raisins, egg yolk and seeds separated. Set these aside.

Arrange all the  bowls near the big mixing bowl of flour, light a candle and begin to tell this story (copied from Cypress Space and this blog adapted the story from All Year Round

Once upon a time, there was a small and prosperous land with lovely hills, valleys, forests,  mountains and happy, hard-working people (sculpt this landscape in the big bowl of flour making a valley in the center).


Then one day a dragon came, foaming and writhing, to lay waste to the land and left it barren (pour the yeasty warm milk in the "valley" and begin stirring to "lay waste" to the landscape)

Darkness came along with freezing ice (throw the salt and sugar down onto the "land") and the people, once happy and so full of light, became unable to work or even smile. (stir and stir to mix the dough).

The angel Michael looked down one day and saw this dark and dismal land and his heart was full of compassion for the people. With one hand he reached for a handful of stars and scattered them on the earth below. (add golden raisins)
 

With the other hand he took gold from the sun and sent it down upon the land as well. (add egg yolk)

The people were warmed by the stars and the sun and they began to work (mix dough with hands).

The farmers ploughed the land again and sowed their seeds (add sunflower seeds, continue mixing) and soon the crops began to grow.

Michael came to the people and told them to be brave and  work hard, to harvest their grain when it was ripe, and to grind it into flour. He told them to knead the flour into dough and bake it into bread, then to share that bread with all...for "each slice that is cut in friendship will warm your hearts and each piece that is eaten will give strength and power to overcome the dragon"  (knead)

The people did as Michael told them and, because of their hard-work and bravery,were blessed with prosperity once again. They sang a blessing as they shared their bread. (knead!)  


Now, the dough is ready for its first rising. Cover it and leave it in a warm place for 1 hour.

Take the gas out, and shape it in a dragon shape/. Let it rise for 45 minutes. 

Bake at 375 degrees for 30-40 minutes until golden brown. ENJOY!

Gevulde Koeken......Galletas Holandesas de Almendra

  

Me encantan estas galletas de almendras ... Las probé en Holanda muuuchooo tiempo atras, y ahora las estoy horneando en casa ...





Pasta de almendra

125 gramos de almendras molidas

110 gramos de azúcar

1 huevo

1/2 cucharadita de ralladura de limón

1/2 cucharadita de esencia de almendra


Masa

320 gramos de harina

180 gramos de mantequilla fría cortada en trozos pequeños

150 gramos de azúcar

1 huevo

Algunas mitades de almendra para decorar


En un procesador de alimentos, combine los ingredientes de la pasta de almendras hasta obtener una pasta suave. Reservar.


En un procesador de alimentos o a mano, combine la harina y el azúcar, agregue la mantequilla. Luego agrega el huevo y un poco de agua si lo necesitas. Haga una masa para galletas que se pueda trabajar con un uslero. Deja reposar 30 minutos en la nevera.


Con un rodillo, haga una masa de 3 mm de espesor. Córtelos en círculos con un cortador. Coloque la mitad de los círculos en un papel de horno en una bandeja para hornear. Con las manos, haga una bolita de la pasta de almendras y aplánela. Colóquelo en la mitad del círculo, y con un huevo batido, cepille los bordes. Coloca la otra mitad de la galleta encima. Sellar los bordes con un tenedor. Pincelamos con el huevo batido y decoramos con una rodaja de almidón. Hornéalos en un horno precalentado a 325F durante 18 minutos o hasta que estén dorados. ¡DISFRUTAR!

Gevulde Koeken....Almond cookies

 



I love this almond cookies......I tried them in Holland, and now I'm baking them at home....





Almond paste

125 grams of grinded almonds

110 grams sugar

1 egg

1/2 teaspoon of lemon zest

1/2 teaspoon almond essence


Dough

320 grams of flour

180 grams cold butter cut into small pieces

150 grams sugar

1 egg

Some almond halves to decorate


In a food processor, combine the ingredients of tha almond paste until you have a smooth paste. Set aside.


In a food processor or by hand, combine the flour and sugar, add the butter. Then add the egg, and some water if you need it. Make a cookie dough that can be worked with a roll pin. Let it rest for 30 minutes in the fridge.


With a roll pin, make a 3mm thick dough. Cut them in circles with a cutter. Place half of the circles on a parchment paper on a  baking tray. With your hands, make a small ball of the almond paste, and flatten it. Place it on a half of the circle, and with a beaten egg, brush the edges. Place the other half of the cookie on top. Brush it with the beaten egg, and decorate it with an almnd slice. Bake them in a preheated oven at 325F for 18 minutes or until golden bron. ENJOY!
