Parfait de vainilla y mascarpone con salsa de moras
El 29 de septiembre estábamos celebrando San Miguel, que es el día del Arcángel Miguel. Es un día para celebrar que el Arcángel Miguel tuvo la victoria sobre Lucifer, o como en muchas otras tradiciones, el día en que la luz vence a las tinieblas. También se considera una forma antigua de acción de gracias ya que se sirve comida de otoño. Para este día se utilizan dos ingredientes principales: zanahorias y moras....
¿Por qué moras? Según la leyenda, cuando San Miguel derrotó a Lucifer, cayó en una zarzamora espinosa. Lucifer escupió en el arbusto y lo agrió si lo recolectas después del 29 de septiembre... por eso es el último día que puedes comer moras.
Parfait de vainilla y mascarpone con salsa de moras
130 g de azúcar
50 g de agua
4 yemas de huevo
1 cucharadita de pasta de vainilla
250 g de queso mascarpone
250 g de nata para montar
para la salsa
1 taza de moras
150 gramos de agua
4 cucharadas de azúcar
2 cucharaditas de maicena
Hervir el azúcar con el agua durante 3 minutos y apagar el fuego. Inmediatamente, agregue las yemas de huevo y bátalo hasta que esté cremoso y de color amarillo pálido. Agregue la pasta de vainilla y el queso mascarpone. Bate la crema para batir hasta que tenga picos suaves, e incorpórala suavemente. Colóquelo en un molde engrasado en el congelador durante 2 horas.
Salsa de moras
En una licuadora, coloca las moras con el agua, y licúa a máxima velocidad por 2 minutos. Cuélalo y colócalo en una olla. Agregue el azúcar y la maicena, y mezcle bien. Cocine a fuego lento a temperatura baja durante tres minutos o hasta que espese. Deja enfriar.
Coloca el parfait sobre una bandeja, córtalo en trozos y sírvelo con salsa de moras... ¡DISFRUTA!

Vanilla Mascarpone Parfait with Blackberry Sauce
On September 29th, we were celebrating Michaelmas which is the day of Archangel Michael. It is a day to celebrate that Archangel Michael had victory over Lucifer, or like in many other traditions, the day that the light wins over darkness. It is also considered an old form of Thanksgiving since autumn food is served. Two main ingredients are used for this day: carrots and blackberries....
Why blackberries? According to the legend, when St, Michael defeated Lucifer, he fell into a thorny blackberry bush. Lucifer spit on the bush making it sour if you collect it after September 29th....that is the reason this is the last day you can eat blackberries.
Vanilla Mascarpone Parfait with Blackberry Sauce
130 g sugar
50 g water
4 egg yolks
1 teaspoon vanilla paste
250 g mascarpone cheese
250 g whipping cream
For the sauce
1 cup blackberries
150 grams water
4 tablespoons of sugar
2 teaspoons of cornstarch
Boil the sugar with the water for 3 minutes, and turn off the heat. Immediately, add the egg yolks and beat it until it is creamy and pale yellow. Ad the vanilla paste, and the mascarpone cheese. Beat the whipping cream until you have soft picks, and incorporate it softly. Place it in a greased mold in the freezer for 2 hours.
Blackberry sauce
In a blender, place the blackberries with the water, and blend it at maximum speed for 2 minutes. Strain it, and place it in a pot. Add the sugar and cornstarch, and mix it well. Simmer it at low temperature for three minutes or until it thickens. Let it cool.
Place the parfait over a tray, cut in pieces and serve it with blackberry sauce....ENJOY!
