Croissant





No hay cornetto italiano sin croissant francés... Tengo que admitir que me encanta el croissant para desayunar con mermelada de frutas y un buen café calentito con leche. Curiosamente, los mejores croissants que he comido estaban en Corea, Vietnam, Japón y Taiwán... y en ese orden. He comido croissants en París hasta en esas panaderías (boulangeries) que han ganado premios, pero nada se compara con esos croissants de Asia.

Encontré esta receta en este enlace de youtube, y el resultado fue fantástico!! Frescos duran tres días....

Croissant

500 gramos de harina con 11-11,5% de proteína

55 gramos de azúcar moreno + 10 gramos de sal

10 gramos de leche en polvo

260 gramos de leche

20 gramos de levadura fresca

50 gramos de mantequilla blanda

Mantequilla para las capas de masa

250 gramos con un mínimo de 82% de grasa


Combina y amasa todos los ingredientes hasta que estén bien combinados. Deja reposar la masa a temperatura ambiente durante 1 hora tapada con plástico. Colóquelo en el refrigerador durante la noche y déjelo fermentar en frío durante 15-18 horas.

En el interior del papel pergamino, distribuya los 250 gramos de mantequilla y haga un bloque (15x27 cm) con un rodillo. Colóquelo en la nevera.



Estirar la masa de croissant para tener un cuadrado de 30x30 cm. Coloque el cuadrado de mantequilla (a 14-18°C) y dóblelo en tres partes.

Estírelo en dirección vertical solo para obtener un espesor de 4 mm y una longitud de 60 cm.

Hacer el plegado en 2/3 y 1/3 seguido del plegado en libro (abrir la masa por los lados con un cuchillo). Aplane la masa hasta que tenga al menos 1,5 cm de grosor y envuélvala. Metemos en la nevera durante 45 minutos.

Estirar la masa (girar 90° con respecto al enrollado anterior) hasta un grosor de 5 mm/60 cm de largo. Dóblalo de nuevo en tres pliegues. Metemos en la nevera durante 45 minutos.

Aplane la masa hasta que tenga al menos 1,5 cm de grosor y envuélvala. Metemos en la nevera durante 45 minutos.

Estirar la masa a 4-5 mm de espesor. El objetivo es tener un rectángulo de 50x35 cm.

Haz triángulos con base de 10 cm, y dale forma de croissant. Pruébelos a 28°C durante 2-2,5 horas. Puedes colocarlo en el horno (apagado) con agua hirviendo en un recipiente.

Hornéalas en un horno precalentado a 180°C durante 20 minutos con ventilador. ¡DISFRUTAR!

There is no Italian cornetto without a French croissant.....I have to admit that I love croissant for breakfast with a fruit jam and a warm good coffee with milk. Interestingly enough, the best croissants I have ate were in Korea, Vietnam, Japan and Taiwan....and in that order. I have ate croissants in Paris even in those bakeries (boulangeries) that have won awards, but nothing compares to those croissants in Asia. 

I found this recipe in this link in youtube  , and the result was fantastic!! They last fresh for three days....

Croissant

500 grams flour with 11-11.5% protein

55 grams brown sugar + 10 grams salt

10 grams powder milk

260 grams milk

20 grams fresh yeast

50 grams soft butter

Butter for the dough layers

250 grams with a minimum 82% fat


Combine and kneed all the ingredients until well combined. Let the dough rest at room temperature for 1 hour covered with plastic. Place it in the fridge overnight, and let it have a cold fermenting in for 15-18 hours.

Inside parchment paper, distribute the 250 grams butter, and make a block (15x27 cm) with a roll pin. Place it in the fridge.


Roll the croissant dough to have a 30x30 cm square. Place the butter square (at 14-18°C), and fold it in three-fold.

Stretch it in vertical direction only to get 4-mm thickness and 60 cm in length.

Make the 2/3 & 1/3 folding followed by the book folding ( open the dough in the sides with a knife). Flatten the pastry to at least 1.5 cm thickness and wrap it up. Put it into the fridge for 45 minutes

Roll the pastry (turn 90° from previous rolling) up to 5 mm thickness/60 cm in length. Fold it again in three-fold. Put it into the fridge for 45 minutes

Roll the pastry to 4-5 mm thickness. The goal is to have a 50x35 cm rectangle.

Make triangles with 10 cm base, and shape it in a croissant form. Proof them at 28°C for 2-2.5 hours. You can place it in the oven (off) with steaming water in a bowl.

Bake them in a preheated oven at 180°C for 20 minutes with fan. ENJOY!

Cornetto Italiano

 




Cornetto es para mí el típico desayuno italiano junto con un capuchino....o al menos lo era para mí cuando vivía en Roma...

Cornetto no es un croissant, la masa es diferente. También hice croissants, pero publicaré la receta más tarde... ¡por ahora disfruta de tus cornetto!

Cornetto

Masa

320 gr de harina fuerte de panadería
40 gr de azúcar
2 cucharadas de mantequilla blanda
pizca de sal
1 huevo temperatura ambiente y batido
  ralladura de 1 naranja o limón. Prefiero naranja que limón.
2 cucharaditas de levadura instantánea frita
1/4 taza de agua y un poco más

Laminación
120 gr de mantequilla blanda. La mantequilla tiene que tener un mínimo de 80% de contenido de grasa.

Para el glaseado
1 yema de huevo mezclada con 4 cucharadas de leche
Azúcar para espolvorear
 
Disolver la levadura en el agua con 10 gramos de azúcar. Déjalo a un lado hasta que esté espumoso. En una batidora, coloca la harina y agrega todos los ingredientes excepto la mantequilla. Rodillado durante 10 minutos. agregar la mantequilla y amasar por 5 minutos.
Coloque la masa en un recipiente engrasado y déjela crecer durante 1 hora. Dobla la masa por los cuatro lados. Repita 3 veces cada 30 minutos. Déjala leudar por 2 horas o hasta que doble su tamaño.

Enrolle la masa en forma de rectángulo de aproximadamente 1 cm de grosor. Distribuya la mantequilla blanda en el medio, luego dóblela en tres partes. Con un cuchillo. corta los lados. Suavemente, enróllalo con un rodillo en la misma dirección que los cortes y dóblalo en tres partes. Cúbrelo con film plástico y déjalo en la nevera durante 30 minutos. Repítelo tres veces con un tiempo de reposo de 30 minutos cada vez en la nevera.
Extiéndalo en forma de rectángulo. Cortar en triángulos con un cuchillo o cortador de pizza. Forme cornetti comenzando a enrollar desde la parte más ancha hacia la más delgada. Colóquelos sobre papel pergamino, y déjelos crecer durante 1 hora.
Precalentar el horno a 365 F), pincelar cada cornetti con la mezcla de yema de huevo y espolvorear con azúcar. Hornéalas durante 15-20 minutos o hasta que estén doradas.

Cornetti is for me the typical Italian breakfast along with a cappuccino....or at least it was for me when I lived in Rome...

Cornetti is not a croissant, the dough is different. I made croissants as well, but I will post the recipe later.....for now enjoy your cornetti!

Cornetti

Dough

320 gr of strong baker’s flour
40 gr of sugar
2 tablespoons of soft butter
pinch of salt
1 egg room temperature and beaten
 zest of 1 orange or lemon. I prefer orange than lemon.
2 teaspoon of instant fried yeast
1/4 cup of water and a little bit more 

Lamination
120 gr of soft butter. Butter has to be a minimun of 80% fat content. 

For the glaze
1  eggyolk  mixed with 4 tablespoons of milk
Sugar for dusting
 
Dissolve the yeast in the water with 10 grams of sugar. Let it aside until it is foamy. In a mixer, place the flour and add all the ingredients except the butter. Kneed it for 10 minutes. add the butter and kneed it for 5 minutes.
Plave the dough in a greased bowl, and let it rise for 1 hour. Fold it the dough four sides. Repeat 3 times every 30 minutes. Let it rise for 2 hours or until it is double in size.

Roll the dough onto a rectangle shape a about 1 cm thickness. Distribute the soft butter in the middle, then fold into three parts. With a knife. cut the sides. Gently, roll it with a rolling pin in the same direction as the cuts, and fold it in three parts. Cover it with plastic film, and leave it in the fridge for 30 minutes. Repeat it three times with resting time of 30 minutes each time in the fridge.
Roll it out to rectangle. Cut into triangles with a knife or pizza cutter. Shape into cornetti by starting rolling from the widest part to the thinnest. Place them over parchment paper, amd let it rise for 1 hour.
Preheat the oven to 365 F), brush each cornetti with the mix of egg yolk and dust it with sugar. Bake them for 15-20 minutes or until golden brown.

Licor de crema de café y Helado de licor de crema de café

 


Finalmente, estoy de vuelta en el blog... Últimamente ha hecho mucho calor aquí... Hemos alcanzado los 38C y mis plantas están estresadas... ¡pero todavía tengo tomates!

Estaba buscando una receta de un licor de café similar al de Bailey... Quería tener el licor además de hacer helado. Probé diferentes proporciones, ¡y esta es la que más me gusta!

licor de crema de café

300g de leche condensada
225 gr de café fuerte frío. Hago espresso de doble tiro dos veces hasta llegar a 225 gramos de café.
150 gramos de ron
1 cucharadita de extracto de vainilla

En una licuadora, mezcle todo junto hasta que esté bien combinado. Colóquelo en una botella limpia. Puede durar 2-3 meses en la nevera. ¡DISFRUTAR!

Helado de licor de crema de café

Natilla
1 huevo

150 gramos de nata (35%)

150 gramos de leche

40 gramos de azúcar

2 cucharadas de leche en polvo

Mezclar todo y cocinar hasta que espese. Deja enfriar. Mézclalo con 200-240 gramos de licor de café. Colóquelo en su máquina de helados. ¡DISFRUTAR!












 

Coffee cream liquor and Coffee cream liquor ice cream


Finally, I'm back to the blog....It has been very hot lately here....We have reached 38C and my plants are stressed out....but I still have tomatoes!!

I was looking for a recipe of a coffee liquor similar to Bailey's...I wanted to have the liquor as well as making ice cream. I tried different proportions, and this one is the one I like the best!

Coffee cream liquor

300g of condensed milk
225 gr of cold strong coffee. I make double shot espresso twice until I reached 225grams of coffee.
150 grams of rum
1 Teaspoon vanilla extract

In a blender, mix all together until well combined. Place it in a clean bottle. It can last 2-3 months in the fridge. ENJOY!

Coffee cream liquor ice cream

Custard

1 egg

150 grams of cream (35%)

150 grams of milk

40 grams of sugar

2 tablespoons of milk powder

Mix all together and cook it until it thickens. Let it cool. Mix it with 200-240 grams of coffee liquor. Place it in your ice cream machine. ENJOY!
