Thanksgiving....a Time to Give Thanks....

Pumpkin's season.....

Thanksgiving is a time to express gratitude. Although is perhaps religious in origin, today it is a special time to celebrate harvest. 

In our first year here in Canada, it was very strange for us this celebration. To be honest, we do not understood the real meaning of Thanksgiving. I remembered that we thought to use the long weekend to prepare some exams for the University, but we were invited to many houses that we could not say no. In Thanksgiving, nobody is alone. Family, friends, and neighbours get together just to say "Thank You" for the health, the job, the family, the friends, the food...just for life!

I would say that this is the most important holiday in NorthAmerica....it is a time where people from all religions, races and cultures celebrate the products of the harvest before the winter arrival. There is only one thing in common among us....just to say Thank You!

Although, at the beginning, it was a strange celebration for us, it has become one of the most important celebrations in our family. We have embraced this day not only for the celebration itself, but for the meaning that represents. There are so many things to Thank for......family here and abroad.... friends that are with us, far away, "virtual friends" like you, and others that have passed away.....health....food....job....just because we exist.....Thank you!

Traditionally, this is a "turkey day". For us that we neither grow with this traditon nor we are fans of roast turkey.....we celebrate as many new immigrants just with pumpkin and some products that resemble our origin. In this year, we have shared pumpkin treats and because of our Latin American roots we have prepared to share quinoa dishes. This year, all the pumpkin dishes comes from your kitchens......I wish I could have made more, but time is limited and we did what we could... I will make a special post to thanks each of this blogger friends for sharing this pumpkins dishes that we enjoyed, for now.....thanks to AnnieCarmenAlfons, and Luis for sharing your wonderful recipes and feed our spirit with your fantastic dishes!!

I would like to take this opportunity to thank you....for taking the time to read me, follow me, comment me, laugh with me and share common interest with me.....Thanks for all the personal emails that I have received since I open this blog on April. I never thought what to expect when I started this blog.....I just wanted to write recipes, collect memories, and look for tasty dishes all over the world.....What I have found? A fantastic community of wonderful people that are always there to share some words and to give a nice push up in some gray days....Thank you so much for allowing me to enter in your kitchens, for allowing me to make your recipes and for making everyday a bright one.......

As you may understand, these days have been very busy.....I will visit you again in few days....

SI !!... corre corre ... el pulpo te persigue ..... ¿Ha notado que a veces les dejo un comentario como "su plato me seguirá este dia "?...... Sí .... Es verdad ..... muchos de sus platos me han seguido desde el día que los he visto ..... especialmente los platos con el pulpo, las moras y los higos .....
Sé lo que estás pensando .... pobrecita .... ella necesita un psiquiatra ..... y probablemente es verdad ..... pero ..... ¿Quién no necesita un psicoanálisis ?......


En cualquier caso, he sido feliz de ser "perseguida" por sus recetas. He descubierto un mundo maravilloso en sus comidas, delicias y recuerdos a través de sus cocinas.
Algunos de ustedes saben que yo vivo en Canadá, pero lejos de la costa. Por esa razón, he limitado el consumo de pescados y mariscos. La mayoría de ellos llegan congelados, y la verdad ..... no me gusta !..... Hay pocos lugares de la ciudad donde se puede comprar pescado fresco, pero a veces no tengo tiempo para ir a esos lugares.

Un día, estaba leyendo algunos de sus blogs cuando una frase cautivó mi atención a fin de tener un pulpo blando, usted tiene que congelarlo (Http://conpanypostre.blogspot.com/ ).... Congelarlo ?.... Fue música celestial para mis oídos ..... aquí sólo se encuentra pulpo congelado, pero nunca lo había comprado porque solo sabía cocinarlo fresco.....
Yo sabía dónde podía encontrar pulpo congelado .... el mercado italiano ...... llegue al boliche y encontré los últimos 5 trozos de pulpo congelado….los compré todos ...... La cajera me preguntó atónita ....." ¿Qué vas a hacer ?".... he dicho .... Por supuesto que comer!
Llegamos a casa, y empecé a seguir la receta ...... cuando otra receta de pulpo maravillosa entró en la pantalla de mi computador.... esta vez desde El Oteador de los Mercados http://lacucharacuriosa.blogspot.com y yo me dije ....." no puedo hacer una receta sin probar la otra ...... sino la segunda receta me va a perseguir!!”..... Sí tienen razón !.... necesito terapia !!.....


Por lo tanto, y con el fin de resolver este problema ..... hicimos los dos platos ..... sí ....ambos.... y son fantásticos!

Como en toda psicoterapia, el primer paso es enfrentar el problema.................y lo hice!!......Ahora, el pulpo no me persigue......yo me lo como!!!!!!

Sin embargo, estos no son los únicos platos de pulpo que he preparado. Cree Usted que después de encontrar sus recetas me quedaría indiferente y no las probaría??.....He probado varias mas.....las pondré  mas adelante!!

YES!!...run run...the octopus is coming.....Have you noticed that sometimes I leave you a comment such "your dish will follow me"?......Yes ....it is true.....many of your dishes have followed me since the day I have seen them.....specially those dishes with octopus, blackberries and figs.....

I know what you are thinking....poor her....she needs a psychiatrist.....and probably it is true.....but.....Who doesn't need a psycoanalysis?......

In any case, I have been happy being "followed" by your recipes. I have discovered a wonderful world of food opportunities, delicacies and memories through your kitchens.

Some of you know that I live in Canada, but far away from the coast. For that reason, I have limited consumption of fish and seafood. The majority arrives frozen, and to be honest.....I don't like it!.....There are few places in the city where I can buy fresh seafood, but sometimes I don't have the time to go to those places.

One day, I was reading some of your  blogs when a sentence captivated my attention "in order to have a soft octopus, you have to frozen it first".(http://conpanypostre.blogspot.com/)....Frozen it first?....That was heaven to my ears.....I only found here frozen octopus, but I have never bought it before because I knew to cook it from fresh only.....

I knew where I could find frozen octopus....the Italian Market......I went there and found the last 5 pieces of frozen octopus, and I bought them all......The cashier atonished asked me....."What are you going to do?"....I said....Of course eat them!!!

We arrived home, and started to follow the recipe......when another wonderful octopus recipe came into my screen....this time from El Oteador de los Mercados http://lacucharacuriosa.blogspot.com   and I said....."I cannot try one recipe without the other one......otherwise.....it will chase me"......Yes you are right!....I need therapy!!.....

Therefore, and in order to solve this problem.....we made both dishes.....yes....both....and they are fantastic!!!
What a wonderful recipes....and What a wonderful blogs they are!!!!!   Both recipes are fantastic, easy, and delicious!!!.....Thanks to these wonderful blogger friends for sharing these wonderful treats. You can see the recipes in their blogs!!

Like in every psicotherapy, the first step is to face the problem.......and I did it.....now, the octopus do not chase me....I eat it!!

Nevertheless, these are not the only octopus dishes I have prepared. Do you think that after findings your recipes I would not try them? I have tried more....I will post them later!!

Pimientos en Aceite de Oliva Extra Virgen?....o Aceite de Oliva Extra Virgen Perfumado de Pimientos y Especies?....

Esta es una receta sencilla que me gusta mucho!. En casa, cuando yo era niña, solíamos hacer un montón de conservas: mermeladas, salsa de tomates, y mi favorita ..... pimientos rojo en aceite de oliva extra virgen.

Estaba siempre dispuesta a ayudar a hacer este plato porque yo quería comer más tarde !!!.....

Ahora, yo sigo la tradición de hacerlo en casa con mi familia, y nos gusta tanto hacerlo como comerlos.
Esta receta no tiene cantidades, pero tiene algunos ingredientes:


Hermosos Pimentones Rojos

Hermosos pimientos rojos Aceite de oliva extra virgen Pimienta negra entera Hojas de romero Ajo Hojas de laurel
No sé la razón, pero esta receta parte haciéndose en la noche, como se hizo en mi casa. Después de preparar la cena, calentar el horno durante 30 minutos a 450F. Mientras tanto, lave sus pimientos rojos, y secarlos bien. Colocar los pimientos en una fuente para horno, y los pone en el horno (después de los 30 minutos). Cocine por 10 minutos, apague el horno y se dejan toda la noche sin abrir el horno.
Al día siguiente, usted tendrá unos muy "arrugados" y suaves pimientos rojos. Esta es una señal de que están cocidos.
Con las manos limpias, pelarlos con los dedos (como un plátano), es muy fácil. Abrir cada uno en la parte superior, y con cuidado recoger todo el jugo que producen, pero desechando todas las semillas.

Pelar ajo (tanto como desee), y partirlos. Lavar y secar bien las hojas de romero y laurel.


En un frasco de vidrio limpio  empezar a poner una capa de pimientos rojos cocidos, y una capa de romero, ajo, pimienta y hojas de laurel (puede usar diferentes combinaciones), y otra capa de pimientos rojos. Continúe hasta que finalice el pimiento rojo.


 

 Una vez que haya finalizado, coloque el jugo de pimiento rojo. Con un tenedor, suavemente mueva los lados de la jarra con el fin de acomodar el jugo y llenar los vacíos de aire. Ponga aceite de oliva extra virgen, y repita el mismo movimiento que acomode el aceite de oliva, rellene los espacios de aire posible, y tega una cubierta gruesa en la parte superior con aceite de oliva extra virgen (mínimo 1,5 cm).

Dejelo en un armario oscuro o el refrigerador durante 5 días antes de usarlo. Disfrute solo, con patatas cocidas, arroz, pan o el plato que desee utilizarlo.
Consejos importantes:
1) Use un horno a gas y no horno eléctrico. He utilizado ambos, y en el horno a gas el gusto es  mejor. No me pregunte por qué. Si usted tiene un horno de leña .... mejor!
2) Tenga cuidado de limpiar todas las semillas. De lo contrario corre el riesgo de tener una conserva que no durará mucho tiempo. 
3) Tenga cuidado al llenar todos los espacios de aire con aceite de oliva extra virgen. Ese paso evitará que se eche a perder antes de tiempo. 
4) No utilice el romero demasiado. Deja amarga esta conserva. 
5) Lavar y secar muy bien las hierbas que usted desea utilizar.


Y después ..... ¿Qué hacer con el aceite extra virgen de oliva cuando el pimiento rojo se ha acabado?



1) Utilizar el aceite de oliva extra virgen para el sofrito de la paella



2) Utilice el aceite de oliva extra virgen para mojar el pan



3) Utilice el aceite de oliva extra virgen a los camarones salteados



4) Utilice el aceite de oliva extra virgen para freir vegetales de la pasta

5) Utilice el aceite de oliva extra virgen para asar verduras en el horno



6) Utilice el aceite de oliva extra virgen para freir pollo para un sándwich



7) Use el aceite de oliva extra virgen para marinar la carne



8) Utilice el aceite de oliva extra virgen para marinar pescados y mariscos



9) Utilice el aceite de oliva extra virgen, justo encima de las patatas hervidas ....



10) ....... Y para su propia creación!

Red Bell Peppers in Extra Virgin Olive Oil? or Extra Virgin Olive Oil with Red Bell Pepper and Spices Parfum?


This is a simple recipe that I really like a lot!. At home, when I was a little girl, we used to make a lot of preserves: jams, marmalades, tomatoes sauce, and my favorite.....red bell peppers in extra virgin olive oil.

I was always ready to help doing this dish because I wanted to eat it later!!!.....

Now, I keep the tradition of doing it at home with my family, and we love both: making it and eating them.

This recipe has no quantities, but it has some ingredients:

Extra virgin olive oil
Black pepper
Rosemary leaves
Garlic
Bay leaves

I don't know the reason, but I start this recipe at night, like it was made in my home. After you have prepared your dinner, heat the oven for 30 minutes at 450F. In the meantime, wash your red bell peppers, and dry them well. Put the bell peppers in an oven proof dish, and put them in the oven (after the 30 minutes). Cook them for 10 minutes, turn off the oven and leave them all night long without opening the oven.

The day after, you will have a very "wrinkled" and soft red bell peppers. This is a sign that they are cooked.

With clean hands, peel them with your fingers (like a banana), it is very easy. Open each in the upper side, and carefully collect all the juice they produce, but discarding all the seeds.

Peel garlics (as many as you want), and slice them. Wash and dry rosemary leaves and bay leaves.



In a clean glass jar, start putting a layer of cooked red bell peppers, and a layer of rosemary, garlic, pepper, and bay leaves (you can use different mixes), and another layer of red bell peppers. Continue until you finalize the red bell peppers.

 

 Once you have finalized it, place the red bell pepper juice. With a fork, softly moves the sides of the jar in order to accomodate the juice and fill the air gaps. Put extra virgin olive oil, and repeat the same movement to acomodate the olive oil, fill any possible air gaps, and have a thick cover on top (minimum 1.5 cms).

Leave it in a dark closet or refrigerator for 5 days before using it. Enjoy just with boiled potatoes, rice, bread or the dish you want to use it.

Important tips:

1) Use a gas oven and not electrical oven. I have used both, and in the gas oven taste better. Don't ask me why. if you have a wooden oven....Better!!
2) Be careful to clean all the seeds. Otherwise you risk to have a  preserve that will not last long.
3) Be careful to fill all the air gaps with extra virgin olive oil. That step will avoid the preserve to go bad.
4) Don't use too much rosemary. It makes the preserve bitter.
5) Wash and dry the herbs you want to use in this preserve.

And after.....What do you do with the extra virgin olive oil when the red bell peppers are gone?

1) Use the extra virgin olive oil to stir-fry the paella
2) Use the extra virgin olive oil to wet bread....
3) Use the extra virgin olive oil to stir-fry shrimps
4) Use the extra virgin olive oil to stir-fry vegetables for the pasta
5) Use the extra virgin olive oil to barbeque vegetables in the oven
6) Use the extra virgin olive oil to stir-fry chicken for a sandwich
7) Use the extra virgin olive oil to marinate meat
8) Use the extra virgin olive oil to marinate seafood
9) Use the extra virgin olive oil just on top of boiled potatoes....
10) And.......for your own creation!!

Sentémonos pronto a comer con todos los que no han comido,
pongamos los largos maneles, la sal en los lagos del mundo,
panaderías planetarias, mesas con fresas en la nieve,
y un plato como la luna en donde todos almorcemos.

Por ahora no pido más que la justicia del almuerzo.
